Palm oil needs very little processing prior to use in foods, is economically viable, versatile, healthy and nutritious. Palm oil is unique because it does not require hydrogenation, making it trans-fat free. This and the fact that it is stable against rancidity, makes it an excellent frying oil. It also has a tendency to crystallise, making it creamy and ideal for making cakes and margarines. Its palmitic acid content also helps optimise aeration in fat/sugar mixtures. On top of all this, palm oil is also very nutritious, high in antioxidants and vitamins. |
